Paula Lambert
Paula Lambert founded The Mozzarella Company in Dallas, Texas, in 1982. Initially a tiny cheese factory, today her company sells award-winning, handcrafted artisanal cheeses throughout the United States. Not only is she a cheesemaker, but she is also the author of two cookbooks: The Cheese Lover's Cookbook and Guide and Cheese, Glorious Cheese. Paula was the President of the International Association of Culinary Professionals (IACP). She has been actively involved in the American Institute of Wine and Food for many years, as well as serving on the Board of Les Dames d'Escoffier International and the NASFT (Fancy Food Show).
An experienced European traveler, Paula loves nothing more than going to local markets with friends in tow, finding the freshest and most delicious produce and ingredients and returning to the kitchen to prepare a feast to enjoy with her friends.
